Goblin’s Midnight Pumpkin Seed Snack

This delicious, crunchy snack is much healthier than all of the other treats that are around at this time of year. Get your kids to help out – they’ll have fun getting their hands mucky.

2 cups pumpkin seeds
2 tsp vegetable oil
1/2 tsp salt
1 cup store-bought dried-fruit-and-nut mix
Salt to taste

1. Scoop the seeds out of a pumpkin and remove strings and pulp. Spread pumpkin seeds in a single layer on a baking sheet and let stand overnight; turn occasionally.

2. Preheat oven to 350ºF. Toss pumpkin seeds with oil and salt. Roast them in the oven, turning occasionally, for 10 to 15 minutes or until golden. Store in an airtight container in the refrigerator or freezer.

3. Stir in dried-fruit-and-nut mix after the roasted pumpkin seeds have cooled and add additional salt, if needed.

Scary Spice Muffins

Top these muffins with a little vanilla or cream cheese icing and decorate with gummy worms or Halloween candies. The lightly spiced batter works for muffins and loaves – both stay moist for several days and freeze well.

13/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/2 cup vegetable oil
2 eggs1 tsp vanilla
1 cup brown sugar
1/3 cup granulated sugar
1 cup unsweetened pumpkin purée
1/2 cup mini chocolate chips (optional)

1. Preheat oven to 375°F. In a medium bowl, use a fork to stir together flour, baking soda, salt, cinnamon, nutmeg and ginger, making sure that there are no lumps.

2. In a large bowl, whisk together oil, eggs and vanilla. Add sugars and pumpkin, stirring until blended. Stir in flour mixture just until combined.

3. Spoon batter into a lightly greased muffin pan and sprinkle with mini chocolate chips (if using). Bake in centre of oven until a cake tester inserted in centre comes out clean, about 18 to 20 minutes.

Let cool in pan for 10 minutes; remove and let cool completely on rack.

Makes 12 muffins
